Mini cupcake Red Velvet
Vorrei aggiungere una nota relativa ai cupcake red velvet :
" Il red velvet è una specie di istituzione culinaria negli USA ( Buddy, il Boss delle torte, docet... ) E '"the" sweet south of the States and is sfruttatissimo for special occasions, especially Christmas and Thanksgiving. The characteristic of this cake is the color of the mix: red! They range from dark purple to a strawberry red color depending on how much you are willing to use. The effect is dramatic, especially because the cake is traditionally stuffed with a creamy white as a cheese-cream, or butter-cream.
The history of this cake is pretty interesting. It seems, in fact, that the color red actually born from the chemical reaction between the cocoa (present in small amounts in the dough) and the component acid given by buttermilk (buttermilk) and the baking soda was originally used instead of yeast. Only later on would have begun to emphasize this feature of the cake with the use of large doses of food dyes. There is also an alternative "bio" to the red dye, which means the use of beetroot juice. This trick allows you to get a sweet brownish red and does not alter the taste of sweet. "
